Olive Journey

The journey of our top quality olives starts nestled in the oasis of our grove, against the backdrop of the rugged beauty of the Cederberg.  The farm lies on the border of the Fynbos- and Succulent Karoo Biomes of South Africa, cultivating wonderful conditions for olive farming.

Each of our 21 656 trees are cared for with passion and biological sustainability.  The micro ecosystem is carefully balanced by roaming wild and farm animals, pruning, mulching and drip irrigation.

Flower to Forage

We eagerly await the first flowers of spring, each a delicate and beautiful anticipation of nature’s gift.  The symbiosis of our bees and the wind ensure pollination, which is the birth of the fruit that will in time delight the palette.

Slowly the fruit matures in the heat of the African summer.  Our Team carefully monitors the ripening process and prepares for the harvest that starts in autumn.

Harvesting is a fine balance between hard work and celebration.  It is critical to pick the fruit at its optimum colour and nature allows a short window period before the fruit shrivels. 

We have optimized our systems which include real time data capturing in the groves, continual quality assessment and volume reconciliation, making sure the olive journey from tree to tank is timeous and smooth.

Alchemy to Authenticity

Our fermentation team has a large responsibility to ensure that the Kalamata olives stay suspended as much as possible to avoid bruising. They are responsible for sizing and transferring the olives into tanks with salt solution to initiate the natural fermentation process.

Our Frantoio olives go straight to the oil press to be transformed into our award winning Extra Virgin Olive Oil.

For the entire Kalamata fermentation period and until a tank is dispatched to our factory, each tank is checked bi-weekly and maintained against strict specification for pH, salt, temperature, circulation and visual quality.  All tank data is captured electronically and in real time, creating a cloud based quality trace for each tank.

Our factory is situated in Paarl and a team of olive specialists work around the clock to convert bulk tanks of olives into our bespoke range of products, including top quality genuine Kalamata table olives and single variety delicate Frantoio extra virgin olive oil.

We have compliancy specialist on board making sure that we adhere to highest level of food safety.  Our certification includes Global Gap, FSSC, Halaal, Kosher and a BBEEE level 2.
